Coup de filet au Cap-Ferret ! Rue des Goélands plus exactement, où Nathan Allard (ex- Le Dauphin , Déviant et Vivant 2 ) et Tom Netzer (ex-Yachting au Cap Ferret) tranchent le lard aussi bien que le bar, et font rimer estomacs bien lestés et quilles sourcées. Derrière la devanture discrète toute de bois vêtue, jusqu’au comptoir aux airs de guinguette – murs en lambris, chaises de bistrot, bouteilles en expo, cuisine ouverte… –, défilèrent ce soir-là : des lamelles de thon rouge de ligne cru baignant dans un écrasé de tomates et jaune d’œuf cru ; de fumants acras de haddock, courgette et ciboulette, à mouiller dans une sauce cocktail citronnée ; un tartare de veau saucé d’un impec’ ajoblanco, le tout camouflé de mimolette râpée ; une vivifiante truite d’Ispéguy en gravlax, à la colle avec de la stracciatella et une vigoureuse sauce verte à la coriandre ; ou encore des orecchiette dans un beurre de sauge ravivé au citron et chapelure dorée bien crousti sur le dessus… Pour finir par se laisser appâter par un mille-feuille de brick, crémeux au citron et crème fouettée qui fit mouche ! // Marise Effouet

La carte, élaborée avec Laurène Amiet (L’Appétit du vin à Bordeaux), aide à rester à flot : gamay ligérien d’Olivier Bellanger au Domaine La Piffaudière (6 € le verre), merlot en biodynamie L’Envol de La Fontaine des Grives (32 € la bouteille), riesling alsacien par les Funambules (34 €)… Envie de sans alcool ? Quelques classiques softs et sodas (3,50 à 4 € les 33 cl) et les évidentes, mais appréciées eaux des Abatilles, en version plate et pétillante (4-5 € les 75 cl).
